  • 2 large eggs
  • 1 teaspoon extra-virgin olive oil 
  • 1 cup spinach
  • 2 tablespoons shredded Cheddar cheese
  • 1 teaspoon parsley


  1. To prepare an omelet, begin by whisking some eggs in a small bowl. In a nonstick skillet, heat some oil over medium-high heat. Tilt the pan to ensure that the oil is evenly distributed. Once heated, pour in the eggs and stir them using a rubber spatula for 5 to 10 seconds. Then, push the cooked parts at the edge of the pan towards the center, tilting the pan to spread the uncooked eggs to the edges. Continue cooking until the bottom turns light golden and the omelet is almost set, which usually takes a minute. 
  2. Remove the pan from heat and add spinach and Cheddar cheese to half the omelet. Fold the other half over the filling. Finally, carefully slide the omelet onto a plate. To garnish, sprinkle some parsley on top.
