Ingredients

Ingredients for 6 servings:

  • 250 grams green lentils, rinsed, drained
  • 2 tablespoons extra-virgin olive oil
  • 2 small onions, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 2 garlic cloves, minced
  • 400 grams of diced tomatoes in juice
  • Salt and pepper to taste

Instructions

  1. To prepare the lentil soup, boil the oil in a large, heavy saucepan over medium-high heat.
  2. Add onions, celery, carrots, and garlic, and sauté until the vegetables start to brown, about 15 minutes.
  3. Next, add the juice of lentils and tomatoes and boil the mixture.
  4. Once it comes to a boil, reduce the heat to medium-low, cover the saucepan, and allow the lentils to simmer until tender, about 35 minutes.
  5. Finally, add salt and pepper to taste and season the soup.
