Ingredients

For 8 servings:

  • One onion, sliced
  • Two celery stalks, chopped
  • 100 grams of unpeeled scrubbed ginger, cut into ½-inch-thick slices
  • Two garlic cloves, crushed
  • One teaspoon pepper
  • 1000 grams organic chicken, cut into seven pieces: 2 breasts, two legs with thighs, two wings, and one back.
  • Salt to taste

Instructions

  1. Combine onion, celery, ginger, garlic, and pepper in a large heavy pot. 
  2. Add chicken and 6 liters of water. Place the chicken breasts on the vegetables and boil over medium-high heat. Cover the pot with a slightly ajar lid and reduce the heat to low. Let it simmer for about 30 minutes or until the chicken breasts are cooked. 
  3. Transfer the chicken breasts to a plate, let them cool, then cover and chill. 
  4. Keep simmering the soup, uncovered, until the broth is fully flavored. It should take about 2 ½ hours longer. 
  5. Return the breasts to the soup to rewarm for about 5 minutes.
  6. Remove the chicken from the broth and let it cool. Coarsely shred the meat, discard the skin and bones. Place a fine-mesh sieve over another large pot and strain the broth, discarding the solids in the strainer. You should have about 8 cups of broth—season with salt.
  7. Rewarm the soup and divide the chicken among bowls. Pour hot broth over the chicken, dividing equally.
