Ingredients

For 10 servings:


Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup icing sugar
  • 2 Tbsp flaxseed oil

Filling:

  • 1/2 cup low-fat whipping cream
  • 1/4 cup icing sugar
  • 3/4 tsp almond extract
  • 3/4 cup mascarpone cheese

Topping:

  • 2 cups fresh or frozen cherries, pitted
  • Zest of 1 orange
  • 2 Tbsp honey
  • 2 Tbsp cornstarch
  • 1/3 cup water

Garnish:

  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tray with paper liners.
  2. In a large bowl, mix together graham cracker crumbs, icing sugar, and flaxseed oil until the mixture is fully combined and crumbly.
  3. Evenly divide the mixture between paper liners and press down to create an even base. Bake crust for 10 minutes. Remove and let cool.
  4. In a small bowl, mix cornstarch with water, stir, and set aside.
  5. In a medium-sized saucepan over medium-high heat, add pitted cherries, orange zest, honey or agave syrup, and the cornstarch mixture. Bring to a gentle boil, stirring often. Cook for 5-10 minutes or until the mixture thickens. Transfer to a bowl and chill in the fridge for at least 30 minutes.
  6. In a small frying pan over medium-high heat, toast sliced almonds for 3-5 minutes, tossing often until lightly toasted. Set aside.
  7. In a large bowl, add whipping cream, icing sugar, and almond extract. Using an electric mixer, whip until glossy with stiff peaks. Fold in mascarpone cheese until fully incorporated.
  8. Divide mascarpone filling evenly among the graham tart shells. Top with the cooled cherry mixture and garnish with toasted almonds. Refrigerate for 1 hour to set.
  9. Serve and enjoy!
