  • 3 tablespoons plant-based butter
  • 2 tablespoons cornstarch
  • 1/4 cup coconut sugar
  • 1 pound (450g) fresh peaches, unpeeled, pitted, and sliced
  • 4 cups fresh blueberries
  • 1/2 teaspoon ground cinnamon
  • Juice of 1/2 lemon (about 1 tablespoon)
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1 cup unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Place the plant-based butter in a cast-iron skillet or casserole dish and place in the oven until the butter is melted.
  3. In a large bowl, whisk together the cornstarch and half of the coconut sugar. Add the peaches, blueberries, cinnamon, and lemon juice, and gently toss to combine with the sugar mixture.
  4. In a separate medium bowl, whisk together the remaining half coconut sugar, whole wheat flour, baking powder, and kosher salt. Stir in the unsweetened almond milk until the mixture forms a rough dough.
  5. Remove the skillet from the oven, add the fruit mixture, and spread evenly across the bottom of the pan. Drop spoonfuls of the batter over the fruit mixture, spacing them out evenly.
  6. Place the skillet on a baking sheet and bake in the lower third of the oven for about 45 minutes until the top is golden and the fruit is bubbly. Serve warm.
