Ingredients

For the Lemon Yogurt Dressing:

  • For the lemon yogurt dressing:
  • 1/2 cup nonfat plain Greek yogurt
  • 3 tablespoons unsweetened almond milk
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon finely grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

For the Broccoli Quinoa Salad:

  • 6 cups broccoli cut into bite-sized florets
  • 3/4 cup uncooked quinoa
  • 1/4 teaspoon salt
  • 1 small shallot finely chopped
  • 1/2 cup coarsely chopped fresh parsley
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Mix Greek yogurt, almond milk, olive oil, lemon zest, lemon juice, salt, and pepper in a medium-sized bowl to make the Lemon Yogurt Dressing. Taste it and add more salt if needed.
  2. To make the salad, boil a large pot of water with salt. While you wait, fill a big bowl with ice water. Put the broccoli florets in the boiling water and cook them for about a minute until they are almost tender. Take out the broccoli with a slotted spoon and put it in the ice water. Keep the boiling water in the pot. After draining the broccoli, put it on a baking sheet lined with a kitchen towel and dab it dry.
  3. Boil the water in the pot again and add the quinoa. Cook it for about 12 minutes until it is slightly firm. Use a sieve with small holes to prevent the quinoa from falling through, then put the drained quinoa in a large bowl. Add 2 tablespoons of yogurt dressing and 1/4 teaspoon of salt, then mix it. Add 1/4 cup of the sauce, broccoli, shallot, parsley, and almonds and mix again. Taste the mixture and add more salt and/or pepper as needed. You can eat it immediately or store it in the fridge until you can serve it.
