Ingredients

For 6 sevings:

  • 3 tablespoons olive oil
  • 700 grams sirloin, sliced thinly
  • 1 shallot, diced finely
  • 6 cloves garlic, pressed or minced
  • 1 large onion, sliced
  • 2 teaspoons dried thyme
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 2 tablespoons corn flour
  • 2 cups bone broth
  • 200 grams mushrooms, sliced
  • 200 grams spinach
  • 1 tablespoon oyster sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • ⅔ cup plain greek yogurt (90 grams)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add half of the steak to the pan and season it with 1/4 teaspoon of salt.
  3. Allow it to cook for 2-3 minutes without moving it.
  4. Then, flip the steak and cook for an additional minute.
  5. Remove the steak from the pan and repeat the process with the remaining steak.
  6. Lower the heat to medium-low and add the olive oil.
  7. Sauté the shallots and garlic for 1-2 minutes.
  8. Add the onions and sauté for 2-3 minutes until they soften.
  9. Add the spices and flour and cook for 1 minute.
  10. Turn the heat back to medium.
  11. Deglaze the pan with the broth, scraping the brown bits off the bottom.
  12. Stir in the mushrooms, spinach, oyster sauce, mustard, and soy sauce. Let it simmer for 2-3 minutes.
  13. Add the steak back to the pan.
  14. Cover and cook for 2-3 minutes until the mushrooms are softened.
  15. Uncover and reduce for 2-3 minutes until the sauce thickens slightly.
  16. Turn off the heat and stir in the yogurt.
  17. You can serve the dish with egg noodles if you prefer.
